Ingredients
360g Sirloin (cut into thin strips)
1 Egg (extra-large)
6 tbsp Corn flour
½ tsp Salt
½ tsp Black pepper
½ cup Sunflower oil
1 Onion (medium, peeled and cut into thin strips)
1 Red chilli (finely sliced)
1 tsp Minced ginger
1 tsp Crushed garlic
2 ½ tbsp Rice vinegar
3 tbsp Soya sauce
2 tbsp Tomato puree
6 tbsp Castor sugar
2 tbsp Tomato sauce
2 tbsp Sweet chilli sauce
Think Chinese takeaway but a homemade, healthier, and even more satisfying version. Prime beef sirloin strips are pan-seared for a deliciously crispy coating. Together with silky onions and fried ginger, garlic, and chilli, the strips are coated in a special sticky sweet chilli Berliner sauce, made with tangy tomato puree, soy sauce, sugar, sweet chilli sauce, and rice vinegar.

Method
- Place the steak strips into a bowl and add the beaten egg. Coat the meat well in the egg and then add the corn flour, salt, and pepper. Toss together to coat the steak. It will be a sticky mixture.
- Heat half of the sunflower oil in a pan until very hot. Working in two batches, place the strips one at a time in the pan and spread them out. Fry the steak until dark brown. Don’t move the meat around too much as this reduces the crispiness. (You can also use an air-fryer instead of the stove.)
- Remove the beef from the pan and drain on paper towel. Add the remaining oil and repeat.
- In the same pan, add the onions and cook for 2 minutes until softened. Add in the chilli, ginger, and garlic and cook for 30 seconds.
- Add the rice vinegar, soy sauce, tomato puree, caster sugar, tomato sauce and sweet chili sauce. Let it bubble until the sauce starts to reduce a little.
- Add the beef back into the pan and stir into the sauce. Heat through for 1-2 minutes.
