2 tps Sunflower oil
1 tsp Calisto garlic lemon & herb spice
1 tsp Salt
1 tsp Coarse black pepper
10 sprigs Fresh thyme
4 cloves Freshly crushed garlic
75g Butter
1 tsp Fresh lemon juice
If you are time-starved but hungry for a satisfying meal, this is the recipe for you. Pan-seared until browned and oven-roasted in a compound butter made with creamy butter, fresh thyme, lemon juice, ang garlic until flavourful and juicy, you can’t go wrong with these great-tasting pork chops.
Method
- Preheat the oven to 180°C. Rub the chops with a little bit of the oil and season well with the Calisto spice, salt, and pepper.
- Add the remaining oil to a pan and heat the pan until hot. Place the seasoned chops into the pan and cook both sides to form a brown crust on each side.
- Place the chops in a roasting pan. Combine the thyme, garlic, butter, and lemon juice and place dollops of the compound butter onto the chops, reserving some of the butter for basting.
- Bake in the oven for 10 minutes or until the core temperature reaches 65°C. Baste the chops with the melted butter every few minutes.
- Allow to rest covered for 5 minutes. Serve the chops drizzled with the pan juices poured over the chops.
